We have been innkeepers for 8 years now and I always look forward to breakfast time. We have our standard breakfast items that many of our repeat guests from Brewster by the Sea and Captain Freeman Inn ask for, and we are continually testing new recipes. This summer we decided to have some fresh baked croissants delivered to us every Saturday from the wonderful french bakery in Hyannis called Pain D’Avignon. Keeping in line with our farm to table philosophy, we decided to keep it simple and offer our guests all of the ingredients to make a gourmet egg sandwich which includes fresh spinach greens, avocado, tomato, fresh basil, gruyere cheese and prosciutto. When we served this dish to our guests this past weekend I was tickled with the response from two of our guests. The first being “did you know all food on vacation has 0 calories” and the second response being “whoa, this is absolutely the best breakfast I have ever eaten and I have been to Paris many times! ” These croissants really are something special and isn’t it comforting to know that while on vacation there are no worries about calories.
